Frozen and Forgotten (what to do with extra eggs)

In late Spring 2017, I had a glut of eggs. After researching the topic, I decided to try freezing some for winter use which is when the chickens are typically on strike.

So, I lightly beat the eggs, added a pinch of salt for each dozen, and tucked them away in the freezer. There they lay...forgotten until this morning. I defrosted a package and scrambled the eggs with some leftover broccoli. They were topped with cheddar cheese and sauteed mushrooms. Wow - after a year in the freezer, these eggs were still delicious. Next Spring, If you find yourself wondering what to do with all those eggs, try freezing them. I know I'll be freezing mine again - only this time I won't forget they are there!
