We recently took a three-year old gilt in for processing. She weighed a whopping 278 lbs! I guessed her weight at 220 lbs. Boy was I off.
The butcher said the meat looked fabulous and the belly made some amazing bacon. Backfat measured between 1.5 and 2 inches. He was surprised and very impressed.
